Abstract

This consumer study examined commercially prethickened water products. It included 6 nectar-thick and 6 honey-like ready-to-serve products, divided equally between starch- and gum-thickened. A total of 104 healthy adults provided acceptance ratings regarding their overall preference and liking of taste, texture, and appearance. Results showed a number of statistically significant differences as some products received more favorable ratings than others. Different patterns of liking were noted for starch versus gum-thickened water products. Acceptance ratings are contrasted with measures of viscosity and discussed in relation to factors influencing clinical decisions.
